Saorsa 1875 — "freedom" in Gaelic — is a stunning 11-bedroom Victorian mansion in Pitlochry, Perthshire, opened in 2019 as the UK's first fully vegan hotel. Set in the heart of Highland Perthshire, each room is named after a Scottish bird or animal. The on-site restaurant serves a celebrated five-course plant-based tasting menu using seasonal and foraged local produce; for every meal served, a tree is planted. A yurt yoga studio in the grounds and proximity to waterfalls, forest walks, and distillery trails complete the experience.
